Banana Almond Muffins 2-1/2 c. almond flour (ground raw almonds) 2 eggs 1/4 c. honey 1/2 tsp. baking soda 1/4 tsp. salt 1/2 tsp. vinegar 1 c. bananas (smashed) OR substitute other fruit/veggie combinations: chopped apple with 1 tsp cinnamon blueberries bananas (smashed) & 2T walnuts bananas (smashed) & 2T chocolate chips (call it a cupcake!) zucchini (grated) Mix all ingredients. Pour batter into muffin tins. Bake at 325 approx 20mns until light golden and firm.
